I know there is an easy to remove *all* inline paragraph/character formatting in a document. Can somebody tell what that is please? Thanks.

Ctrl+A and Ctrl+Q remove manual formatting. If you want to clear both manual and styles formatting and if you are using W2007/10, click the formatting button (Home tab > Font group) to leave only "plain text", according to the tip, but it leaves everything selected in the normal style.

An alternative method for formatting everything in Normal style with no character or paragraph spacing is
Control-A
Control-Q
Control-Space
Control-Shift-N
(can you tell that I prefer using the keyboard to the mouse?)

Yep. And that's cool. Different strokes... and all that.
