Storing wine
Hi,
The wine I am talking about is a cheap table wine (red)...
I have 2 uncorked bottles, 1 is 3/4 finished and the other is half finished. I also have a almost full 5L box wine that will take a few days to finish.
My question is about storage.
It is hot here...bordering 37C/98F. Is it better to store the wine in the fridge or better to leave it on the kitchen counter where the room temp is not much cooler than outside. I olny pan to store the wine for the next few days...consuming a glass or two per night till it is finished.

I'd store the bottles in the fridge. After pouring a glass, wait 5 minutes or so before drinking it.
The 5 litre box probably uses nitrogen to keep the wine from oxidizing. If so, there is no need to store it in the fridge, although it wouldn't hurt. Wine at 37°C isn't very pleasant...

I usually keep the wine outside on the counter top, but due to the heat I just wanted to make sure.

Hans is right Rudi. Once uncorked, its best to put it in the fridge.

Dave, I don't think it really matters which wine one ends up drinking in the dark fridge. These are all worthy of consumption. Drinking them in the dark might be a grand idea as, in the dark, there is only you and the wine...no distractions, no sounds....just the ability to experience the aroma and flavour in perfect stillness.

Refrigerate the wine as previously mentioned. You can let it get to room temp prior to drinking, but drinking hot wine doesn't sound too good.

I don't actually agree with the recipe. Use brown sugar instead of white. Before adding the wine, add a teaspoon of freshly ground nutmeg. The rest is close enough.

I never have white sugar in the house. Always brown and/or light brown sugar.
I'm not keen on nutmeg so I'll leave that out. The rest is a awesome combo. I look forward to trying this out.
