and what about chick peas?

Along with other beans and pulses, I want to use more chick peas. I know that I can make Hummus and can use them in curries, but what else is there? I'm not overly a fan of curries. What other cuisines use them and how?

I haven't thought of chick peas the same way since a parody last year on cooking shows ("Disaster Chef") where, when chick peas were required, the chef lifted up two small chickens and used their water.

Chick peas are common in Middle Eastern cookery.

I'll cook them with onions and some canned tomatoes, seasoned to taste.

They're good in cous cous. Actually, I think I'll put some in tonight's dinner.

Soup, mashed, with youghurt and mint...

Me too. I buy them in bulk at The Bulk Barn.
I saw a recipe for chick pea soup a couple of weeks back, but was too depressed with the state of my Lounging to do anything about it. I'll try to track it down. (Later: I can't find it, darn!)

The writer pointed out out that many great chick-pea soups can be made by adding bits of left over sauces or spices - that in this way he made a great variety of tasty soups from one simple staple.
Questions:
  • Suppose I boil up five cups (dry) of chick peas and keep them in a bowl in the refrigerator. How long might they last, that is, be suitable for re-boiling in a soup?
  • Has anyone tried freezing boiled chick peas?
  • Bottling them for instant-use?

I have been enjoying chickpeas since I was born.

Love them in salads and when I use them in Pasta Fagioli.

Seems to be very popular because they are readily available in many grocery stores in my area.

That is my favourite soup at The Olive Pits. I love hummus at CPK aka California Pizza Kitchen as well....

I thought that was the other little opera that always plays with Cavalleria Rusticana(sp?) Or I Pagliacci(sp?)

Heidi Swanson has several chickpea recipes posted in her blog 101 Cookbooks

The amazing thing about Heidi's recipes is that they are sooo good, you hardly notice that they are all vegetarian. I haven't tried all of her chickpea recipes, but I can vouch for the Pan Fried Salad and the Lemony Stir-Fry :yum: (just don't tell Heidi that I substituted chicken for the tofu in the Lemony recipe)

I am going to try the Whipped Chickpea Hummus Recipe. Our Pizza Hut always has garbanzo beans on the salad bar and I usually take a nice bowl of them and mash them to eat on the cheesy bread--course the kids look at me like I'm full of beans :laugh: :evilgrin: It's only been in the past 5 years that I've acquired a taste for these legumes. Since dining at CPK their hummus comes with diced roma tomatoes and Italian herbs with very flaky pita bread. I like the sounds of this recipe from Heidi and will definitely be getting some fresh spinach to try it out. Let ya know how it tastes. Thanks Samantha :free:
