From searching I dont think this is possible but...Is there a setting somewhere in Windows Live Mail whereby when you press the send button and send an email some sort of notification is displayed such as in some webmails "your message has been sent". I would like a confirmation without going to the sent items folder to check that my emails actually went ok.

You could put your own email address in the CC or BCC line & send yourself the same email. It works - I've just tried it.
