Is there any way method to enhance Microsoft Outlook security, this few day i found email is easily be scam by those scammer. Is it using a better Anti Virus software can help?

The scammer can easily access to my outgoing scanned document through email and change the detail to resend to other email user? I really hope anyone who encounter this problem can share the solution with me how to solve it.

If someone else uses your email address as sender, there is nothing you can do about that. It has nothing to do with your Outlook.

You could add a digital signature to all your outgoing emails, and make sure that everyone knows if they get an unsigned email that claims to be from you then it's fake. I do this, using a free certificate from Actalis
