How can I change the default template for a new Outlook 365 email?
I followed the instructions in Outlook Help, and edited the document NormalEmail.dotm in C:/users/username/AppData/Roaming/Microsoft/Templates
I only want to change the default font from Colibri to Arial.
I selected the only character, changed the font and saved the document. Modification date/time is shown as 28/07/2020 18:11
However, a new email, still shows Colibri. I have closed Outlook and done a restart, but Outlook still shows Colibri in the new email.

Unfortunately, those instructions don't work, as you have found. I have no idea what NormalEmail.dotm is for.
Try the following:
- Start a new email message.
- Click in the body of the message.
- Specify the font and paragraph formatting that you want.
- Click File > Save As.
- In the address bar of the Save As dialog, enter %appdata%\microsoft\stationery and press Enter.
- Save the message as a HTML file named (for example) MyTemplate.htm
- After saving the HTML file, you can discard the email message.
- In Outlook, select File > Options.
- Select Mail in the navigation pane on the left.
- Click 'Stationery and Fonts...'.
- Click Theme...
- Select 'MyTemplate (Stationery)' (or whatever you used as name).
- OK your way out.
A new email message should now use your font and paragraph settings.
