In case it happens to someone else...
Word 2007 crashed and when it restarted the Acrobat tab had disappeared. A quick Google search led me to the solution:

A related tip: add-ins may become disabled after a crash.
Click the Office button.
Click Word Options.
Click Add-Ins.
Select Disabled Items from the Manage dropdown.
Click Go...
If there are items listed in the Disabled Items dialog, you can select them and click Enable.
Finally click OK.

That's easier than browsing down through C:\Program Files\... to find a .dll
