SBS 2003 to 2008

Guy's, just asking some advice.
We're upgrading from SBS 2003 to 2008 and just wanted some thoughts from you more experienced guy's as to the best way forward.
I won't be partaking this project but our IT department will.
They mentioned Migration, which subsequently has come to our knowledge that it will fail.
Secondly Piecemeal has been mentioned, rather scepticle about this to be honest as I feel taking chunks could be both tedious and laborious.

Can you guy's recommend a process so we have no inconvenience?

We recently had to rebuild the server due to a virus which crept in ( nightmare ) and took weeks to bring everything back to normal. The hardware is quite old now hence the decision of replacing it. Over to you guy's.
